Roasted Tomatoes, Herbs, and Olive Oil. The perfect dish to eat with a meal, as ingredients in a future meal. Flavor enhancer.

Preparation:

Roma or any variety of large vine tomatoes such as Better Boy or Early Girl tomatoes.

Cut tomatoes and place in ceramic or glass dish. Pack, but don't overlap the tomatoes. Salt to taste. Add 6-8oz of smashed garlic. 6-8 sprigs of thyme, rosemary, and oregano. Add approximately 2 cups of Extra Virginia Olive Oil.

Cook at 175 degrees F for 3-5 hours depending on tomato size. They will be done when they start blistering and bubbling. Allow to cool to room temperature. Transfer to air tight jar, and store in refrigerator for a few months.
