Spontaneous comfort stew made on the fly using ingredients from your pantry and refrigerator.
- Ingredients:
- Carrots
- Celery (the leaves at the top of the celery stalks)
- Onion
- Garlic (minced)
- Garlic and Onion Bratwurst or your choice of meat
- Worcestershire sauce
- Fresh Cilantro
- Fresh basil (minced)
- Chicken Stock (or Beef stock if using a beef product)
Preparation:
In a medium saucepan, saute carrots in bacon fat (or butter,) until crispy around the edges. Next add the meat until cooked thoroughly and browned. Add celery and onions, sauteed for another 5-6 minutes. Add garlic. Let simmer for 3-4 minutes. At this time, add 1/8 cup of Worcestershire sauce (or 1/4 cup if you prefer a strong flavor.) Bring to a boil. Add the herbs (Cilantro, celery, and basil) last as they tend to break down easily. For some spice, add red pepper flakes.
Then add 4 cups of chicken stock and 14.5 oz of fire roasted tomatoes. Allow to simmer for 20 minutes to allow flavors to meld at which point it'll be ready to serve.
Serve with grilled cheese, pickles, or a hearty crusty bread.
